Each November, after the plants have been tipped and covered, and the greenhouses have been buttoned up, I take a moment to let the empty parking lot and the quiet aisles all sink in. Behind me, there are no familiar faces to greet or new faces to meet. Our greenhouses have fallen silent, and so we turn our attention indoors and inwards. We will finalize next year’s orders, study up on what’s new and what’s neat, brainstorm all the ways we can make Knecht’s better then ever for you in spring 2018, and be thankful for the wonderful visitors, customers and friends that keep Knecht’s growing!
As the sunset turns the bare branches of the trees into silhouettes, I know it’s time to head home. I walk along the empty benches that were overflowing with vegetables and herbs this spring, and can’t help but imagine that their bountiful harvest might be well represented next week in the form of homegrown pumpkin pie, roasted squash, green bean casserole, mashed potatoes, candied carrots, garlic dill pickles, and richly seasoned stuffing.
